Cocoa Liquor

Cocoa liquor is the key ingredient in chocolate. Also known as cocoa mass or cocoa paste, no other component in the production of chocolate has such an impact on the ultimate flavor outcome.

By creatively using cocoa from different origins with variations in roasting and post-roast treatment, we offer a variety of superior cocoa liquors. Available in either liquid or solid formats (as blocks, ingots and easier-to-melt liquor thins), our cocoa liquors provide the flexibility to achieve recipe goals.

What is cocoa liquor?

Cocoa liquor, also known as cocoa mass or cocoa paste, is the key to great chocolate and it provides the taste signature of the recipes in which it is used. ani's sourcing, processing and packaging capabilities allow for exceptional quality cocoa liquors as the flavor of cocoa liquor is dependent on three distinct, yet equally important factors:

  • the type of cocoa bean (benefiting from ani’s selection and blending expertise),

  • development of the flavor precursors in the cocoa bean during fermentation and drying, and

  • the further enhancement of flavors that occurs during fully controlled roasting processes.

Cocoa butter

Without the important inclusion of cocoa butter, chocolate would not exhibit the specific taste and textural characteristics that make it so pleasurable.

The cocoa butters we produce are available in several different formats (including fully and partially deodorized options), such as liquid, blocks and as cocoa butter chips, ensuring smooth integration into any recipe or manufacturing process.

Sourcing more than 1M tonnes of cocoa beans annually from every major cocoa growing region across the globe, we are leaders when it comes not only to quantity but also quality. From Ecuador to Cote d'Ivoire to Papua New Guinea, we offer superior cocoa beans at scale, ranging from high quality West African bulk shipments to small lot, fine flavor cocoa beans.
